Spelled soup

Ingredients for 4 people:

200 grams of Spelled, 2 ripe tomatoes, a carrot, a coast of celery with leaves, a ham bone, pecorino cheese, extra virgin olive oil, salt, black pepper in grains.

Keep the ham bone in warm water for a couple of hours, then dip it in boiling water for 10 minutes. Put the vegetables, the whole onion, the ham bone and 2 liters of water in a saucepan. Cover and cook for an hour. Strain the broth. Measure a liter and a half. Bring it back to the boil and add little salt. When it boils, pour the spelled and cook it for 25 minutes, stirring often.
Cut the lean part into cubes and add them to the soup. Keep it on the fire for few moments, then serve with grated pecorino cheese, a drizzle of a raw oil and a handful of pepper.
